This sweet chutney with a sharp edge of ginger used to be served with sweet pulao at Mangalorean Christian weddings till the 90s. Now replaced by Szechwan/Tandoori chicken and paneer, of course.
Mum’s precise recipe to yield one cup of date and beetroot chutney:
- 8 deseeded dates,
- 3 mint leaves,
- ½ inch ginger,
- ¼ boiled beetroot,
- 1 deseeded Kashmiri chilli,
- Salt to taste
Grind to a paste, serve with sweet pulao.
